Within Weinberg Arlberg, this evening focuses on one of the most precise and at the same time rarest expressions of Burgundy: the wines of Domaine Raveneau.
In the Griggeler Stuba, a concentrated setting allows origin, vintage, and maturity to reveal themselves in full depth. Like few others, Raveneau stands for an uncompromising interpretation of Chablis, shaped by mineral clarity, structure, and exceptional longevity.
The evening begins in the wine cellar of the house, where the first flight is served alongside small amuse-bouches. This immediate setting opens the evening quietly, focusing on the wines and preparing the hours that follow.
At the centre of the tasting stands a comparison that is only rarely possible: different vintages and sites of Domaine Raveneau are placed side by side and show how finely origin and time can be differentiated in the glass, from cool, linear minerality to greater depth and maturity.
This is accompanied by a six-course menu from the Griggeler Stuba that takes up the character of the wines precisely without overlaying them.
As a deliberate counterpoint, an „Alttus“ flight from Salomon complements the evening. The wines bring another perspective into play and broaden the view of structure, style, and expression.
